“As a meat industry researcher, I must point out that the Meat Industry Hall of Fame, which I find as mysterious as you do, is not the meat industry’s only hall of fame. I more admire the members of the Cured Meats Hall of Fame. If you met them, I’m sure you would, too. The application form on their web site only allows you to apply to be selected in 2008. Time moves more slowly in the cured meats part of our industry.”
